Recipes - Vegetables - Grilled Potato Wedges


  • 6 red potatoes
  • ¼ cup olive oil
  • coarse salt
  • fresh ground pepper
  • 1 tbsp fresh chopped rosemary
  • malt vinegar
  • Mesquite Smoking Chips soaked in water for about 5 minutes


Cut the potatoes lengthwise into quarters. Pour the olive oil on a plate and roll the potato pieces in the oil until they are thoroughly covered. Sprinkle the potatoes with salt, pepper and rosemary. Put the potatoes on the grill away from the heat. Cover the grill and cook the potatoes until tender, turning them every 10 minutes. Depending on the thickness of the wedges, the potatoes should be done in 20 - 40 minutes. When the tip of a sharp knife easily pushes all the way through the potatoes, they're ready. Sprinkle liberally with malt vinegar. Serve hot off the grill.

"veggiespage">After preparing the grilling plank add a bed of fresh herbs on the top of the plank and then add the defrosted veggies on top of that. Cook until the veggies are tender crisp.
