Recipes - Vegetables - Plank-Grilled Mixed Vegetables

Ingredients

  • 1 sliced carrot
  • 1 red pepper
  • 1 orange pepper
  • 1 yellow pepper
  • 2 portobello mushrooms
  • 2 quartered roma tomatoes
  • 1 red onion
  • 2 stalks celery
  • ¼ head cauliflower
  • 1 cup olive oil
  • ½ cup balsamic vinegar
  • 1 tbsp chopped garlic
  • ½ cup fresh chopped parsley
  • ½ cup fresh chopped basil
  • salt
  • pepper
  • your choice of Platter-Sized Planks soaked in water for about 20 minutes 2½ hours

Instructions

Mix olive oil, vinegar, garlic, parsley, basil, salt and pepper. Place all vegetables in a large bowl and pour mix over them. Refrigerate for 3 hours. Stir occasionally. Soak grilling plank 1 hour in water. Preheat grill to 350° F. Place vegetables on plank and place plank on grill for indirect grilling. Close the lid. Cook for 20 to 30 minutes or until the vegetables are soft but still have a crunch to them.
