Recipes - Poultry - Hot Smoked Buffalo Wings
- 8 lbs fresh chicken wings
- ¾ cup butter
- 1½ cup hot sauce
- cayenne pepper
- your choice of Smoking Chips soaked in water for about 5 minutes
Sprinkle the chicken wings liberally with salt and cayenne. Preheat the grill to 200° F. Fill your Smokerin™ smoker box with smoking chips. Place the smoker box directly on the cooking surface above the fire, or place it on top of the burner deflectors below the cooking surface and above the burner.
If you would like the skin crispy, grill them for a few extra minutes. Place chicken wings on a cookie sheet and place in grill with the lid down at 200° F for three hours. Remove wings from grill and cut apart the drumstick and wing sections discarding the wing tips. Combine the butter and hot sauce in a sauce pan and heat until steaming. Pour the sauce over the wings and enjoy.
